Passion Fruit Mousse

Ingredients:

  • 1 cup of natural or concentrated passion fruit juice
  • 1/2 cup of sugar
  • 2 sheets of clear gelatin or 2 tablespoons of unflavored gelatin
  • 4 egg yolks
  • 3/4 cup of sugar
  • 250g of powdered milk
  • Condensed milk essence

Preparation:

  1. Passion Fruit Syrup: In a saucepan over medium heat, combine the passion fruit juice and 1/2 cup of sugar. Let it simmer for about 25 minutes until slightly thickened, then remove from heat. If using fresh fruit, blend the pulp and strain it well to remove the seeds.
  2. For the Mousse:
    • Hydrate the gelatin sheets in a little cold water.
    • In a separate bowl, beat the egg yolks with 3/4 cup of sugar and the powdered milk.
    • Meanwhile, heat the syrup in a double boiler and slowly add it to the egg mixture, stirring constantly.
    • Continue cooking in the double boiler until the mixture thickens to a custard-like consistency. Remove from heat and add the hydrated gelatin, stirring until fully dissolved. Let the mixture cool completely.
  3. Incorporating the Cream: Once the mixture is cool, gently fold in 1 cup of cold whipped cream. Fill shot glasses with the mousse and refrigerate.
  4. Garnish: For an extra touch, sprinkle some sugared passion fruit seeds on top of each shot. Enjoy this refreshing tropical delight!
